Instructions
- Preheat oven to 325 degrees F.
- In a large bowl, mix together the flaked coconut, graham cracker crumbs, granulated sugar, and chopped pecans.
- Add the unbeaten egg whites to the dry ingredients and stir by hand until fully combined and moist.
- Pour the mixture into the unbaked 9-inch pie shell and spread evenly.
- Bake in the preheated oven for 25 to 30 minutes until the filling is glossy and set but still gooey in the center. Do not overbake.
- Remove from oven and let cool slightly.
- Serve warm topped with sliced bananas and whipped cream.
