Irresistible Cinnamon Peach Crumble Bars

Delicious buttery bars with a sweet peach filling and a cinnamon-spiced crumble topping.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 3 cups fresh peaches, peeled and diced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the egg until combined.
  3. Press two-thirds of the dough into the prepared pan to form the crust.
  4. In another bowl, toss peaches with lemon juice, cinnamon, and cornstarch. Spread evenly over the crust.
  5. Crumble the remaining dough over the peach layer.
  6. Bake for 30-35 minutes or until golden brown. Let cool before slicing into bars.
