For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 3 cups fresh peaches, peeled and diced
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 2 tablespoons cornstarch
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a 9×9-inch baking pan with parchment paper.
- In a large bowl, mix flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the egg until combined.
- Press two-thirds of the dough into the prepared pan to form the crust.
- In another bowl, toss peaches with lemon juice, cinnamon, and cornstarch. Spread evenly over the crust.
- Crumble the remaining dough over the peach layer.
- Bake for 30-35 minutes or until golden brown. Let cool before slicing into bars.
