For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp cinnamon
- 2 tbsp melted butter (for coating)
- 1/4 cup granulated sugar mixed with 1 tsp cinnamon (for coating)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together 1/2 cup granulated sugar and 1/4 cup butter until light and fluffy. Add the egg and vanilla, mixing well.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until a dough forms.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Roll the dough into small balls, flatten slightly, and place a small dollop of cream cheese mixture in the center. Fold the edges over to seal.
- Bake for 12-15 minutes until lightly golden. Let cool slightly.
- Brush each cookie with melted butter, then roll in the cinnamon-sugar mixture to coat.
