Irresistible Churro Cheesecake Donut Cookies

A decadent fusion dessert combining the cinnamon-sugar crunch of churros, creamy cheesecake filling, and soft cookie texture in one irresistible treat.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup cinnamon sugar mixture (1/2 cup sugar + 1 tbsp cinnamon)
  • 1/4 cup melted butter for coating

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together softened butter and granulated sugar until fluffy. Beat in eggs one at a time, then add vanilla.
  3. In separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until dough forms.
  4. In another bowl, beat cream cheese and powdered sugar until smooth for filling.
  5. Take tablespoon of dough, flatten, add 1 tsp cream cheese filling, seal with another tablespoon of dough, and roll into ball.
  6. Bake for 12-15 minutes until edges are golden. Let cool slightly.
  7. Brush warm cookies with melted butter and roll in cinnamon sugar mixture.

Notes

You can customize the seasonings to taste.
