For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup cinnamon sugar mixture (1/2 cup sugar + 1 tbsp cinnamon)
- 1/4 cup melted butter for coating
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together softened butter and granulated sugar until fluffy. Beat in eggs one at a time, then add vanilla.
- In separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until dough forms.
- In another bowl, beat cream cheese and powdered sugar until smooth for filling.
- Take tablespoon of dough, flatten, add 1 tsp cream cheese filling, seal with another tablespoon of dough, and roll into ball.
- Bake for 12-15 minutes until edges are golden. Let cool slightly.
- Brush warm cookies with melted butter and roll in cinnamon sugar mixture.
