For the Crust:
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup grated carrots
- 1/2 cup chopped walnuts
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat butter and sugars until fluffy. Add egg and vanilla, mixing well.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in carrots and walnuts.
- In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
- Drop tablespoonfuls of cookie dough onto baking sheets. Make an indentation in each and fill with 1 tsp cream cheese mixture. Cover with more cookie dough.
- Bake for 12-14 minutes until edges are golden. Cool on baking sheets for 5 minutes before transferring to wire racks.
