Irresistible Boston Cream Pie Cupcakes

Delicious vanilla cupcakes filled with creamy custard and topped with rich chocolate ganache.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup vanilla custard or pastry cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Alternately add flour mixture and milk, beginning and ending with flour.
  5. Divide batter among cupcake liners. Bake for 18-20 minutes. Cool completely.
  6. Use a small spoon to scoop out the center of each cupcake. Fill with custard.
  7. Heat heavy cream until simmering, pour over chocolate chips. Stir until smooth.
  8. Spoon ganache over each cupcake. Let set before serving.

Notes

You can customize the seasonings to taste.
