For the Crust:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup whole milk
- 1 cup vanilla custard or pastry cream
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
- Alternately add dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients.
- Divide batter evenly among cupcake liners. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
- Once cooled, use a small knife or cupcake corer to remove the center of each cupcake. Fill with custard.
- For the ganache, heat heavy cream until simmering. Pour over chocolate chips and let sit for 2 minutes, then stir until smooth.
- Dip the top of each cupcake into the ganache, allowing excess to drip off. Let set before serving.
