Irresistible Boston Cream Pie Cupcakes

Delicious vanilla cupcakes filled with creamy custard and topped with rich chocolate ganache.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup prepared vanilla custard or pudding
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Alternate adding flour mixture and milk, mixing just until combined.
  4. Divide batter evenly among cupcake liners. Bake for 18-20 minutes until golden. Cool completely.
  5. Use a small knife to cut a cone from the top of each cupcake. Fill with custard and replace the top.
  6. Heat cream until steaming, pour over chocolate chips, let sit 2 minutes, then stir until smooth. Spoon over cupcakes.

Notes

You can customize the seasonings to taste.
