For the Crust:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup whole milk
- 1 cup prepared vanilla custard or pudding
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Alternate adding flour mixture and milk, mixing just until combined.
- Divide batter evenly among cupcake liners. Bake for 18-20 minutes until golden. Cool completely.
- Use a small knife to cut a cone from the top of each cupcake. Fill with custard and replace the top.
- Heat cream until steaming, pour over chocolate chips, let sit 2 minutes, then stir until smooth. Spoon over cupcakes.
