Irresistible Boston Cream Pie Cupcakes

Delicious vanilla cupcakes filled with creamy custard and topped with rich chocolate ganache.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup vanilla custard or pudding
  • 4 oz semi-sweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a bowl. In another bowl, cream butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla. Alternate adding flour mixture and milk, mixing until just combined.
  4. Divide batter evenly among cupcake liners. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  5. Use a small knife to cut a hole in the center of each cupcake. Fill with vanilla custard.
  6. Heat heavy cream until simmering, then pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth. Spoon ganache over each cupcake.
