For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for rolling
- 1 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped almonds
- 1/2 cup dried blueberries, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and 1/2 cup powdered sugar until light and fluffy. Mix in almond extract.
- Gradually blend in flour and salt until just combined. Fold in chopped almonds and dried blueberries.
- Shape dough into 1-inch balls and place 1 inch apart on prepared baking sheets. Bake for 12-15 minutes until set but not browned.
- Let cookies cool for 5 minutes, then roll in additional powdered sugar while still warm. Cool completely on wire racks and roll in powdered sugar once more before serving.
