For the Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 2 tablespoons granulated sugar
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup blackberries, fresh or frozen
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with 12 liners.
- Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press 1 tablespoon into each liner to form the crust.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla. Pour over crusts.
- Simmer blackberries, 2 tablespoons sugar, and lemon juice until saucy. Swirl into cheesecake batter.
- Bake for 20-25 minutes until set. Cool completely, then refrigerate for at least 2 hours before serving.
