For the Crust:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup melted butter
- 1 large egg
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla until well combined.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- In a separate bowl, beat cream cheese, powdered sugar, and lemon juice until smooth.
- Fill each cupcake liner halfway with banana batter, then add a spoonful of cream cheese mixture. Top with more banana batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool before serving.
