Irresistible Banana Cheesecake Cupcakes

Deliciously moist banana cupcakes with a creamy cheesecake center, perfect for any occasion.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla until well combined.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. In a separate bowl, beat cream cheese, powdered sugar, and lemon juice until smooth.
  6. Fill each cupcake liner halfway with banana batter, then add a spoonful of cream cheese mixture. Top with more banana batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool before serving.
