Hummingbird Banana Bread

A tropical twist on classic banana bread with pineapple, bananas, and pecans for a moist and flavorful treat.

For the Crust:

  • 3 ripe bananas, mashed
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix mashed bananas, pineapple, granulated sugar, brown sugar, oil, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in pecans.
  5. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
