For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup melted butter
- 1 egg
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup honey
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with liners.
- In a bowl, mix flour, sugar, baking powder, and salt. Add milk, melted butter, egg, and vanilla. Stir until just combined.
- In another bowl, beat cream cheese until smooth. Add 2 tbsp honey and mix well.
- Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
- Mix chopped pecans with remaining honey and sprinkle over muffins.
- Bake for 20-25 minutes or until golden. Let cool before serving.
