Honey Pecan Cheesecake Muffins

Delicious muffins with a creamy cheesecake center, topped with honey-glazed pecans.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup honey
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Add milk, melted butter, egg, and vanilla. Stir until just combined.
  3. In another bowl, beat cream cheese until smooth. Add 2 tbsp honey and mix well.
  4. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
  5. Mix chopped pecans with remaining honey and sprinkle over muffins.
  6. Bake for 20-25 minutes or until golden. Let cool before serving.

Notes

You can customize the seasonings to taste.
