Honey Pecan Cheesecake Muffins

Delicious muffins with a creamy cheesecake center and sweet honey-pecan topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 8 oz cream cheese, softened
  • 1/4 cup honey
  • 1/2 cup chopped pecans
  • 2 tbsp brown sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk, oil, and egg, mixing until just combined.
  3. In another bowl, beat cream cheese and honey until smooth. Fold in half of the chopped pecans.
  4. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter. Sprinkle with remaining pecans mixed with brown sugar.
  5. Bake for 20-25 minutes until golden and set. Cool before serving.

Notes

You can customize the seasonings to taste.
