Honey Pecan Cheesecake Muffins

Deliciously moist muffins with a creamy cheesecake swirl and crunchy honey-glazed pecan topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup honey
  • 1/2 cup chopped pecans
  • 2 tbsp honey (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, oil, egg, and vanilla. Combine wet and dry ingredients until just blended.
  3. In a separate bowl, beat cream cheese and 1/4 cup honey until smooth. Fold in chopped pecans.
  4. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter. Drizzle with 2 tbsp honey.
  5. Bake for 20-25 minutes until golden and a toothpick comes out clean. Cool before serving.

Notes

You can customize the seasonings to taste.
