  • 1/3 cup buttermilk, at room temperature
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar, sifted
  • 2 tablespoons peach puree (made from frozen peaches, thawed)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Peach slices for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract, honey, and peach puree until combined.
  6. Alternately add dry ingredients and buttermilk to the wet mixture, beginning and ending with dry ingredients; mix until just combined.
  7. Spoon batter evenly into cupcake liners, filling about 3/4 full.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool cupcakes completely on a wire rack before frosting.
  10. For the frosting, beat cream cheese and butter until smooth.
  11. Gradually add powdered sugar, beating until fluffy.
  12. Mix in peach puree, honey, and vanilla extract until well combined.
  13. Frost cooled cupcakes and garnish with peach slices and a drizzle of honey if desired.

Notes

Use room-temperature ingredients for best texture. Fresh or thawed frozen peaches work well for puree. Drizzle with honey for added sweetness and garnish with peach slices for an elegant presentation.
