For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1/4 cup honey
- 2 jalapeños, sliced (seeds removed for less heat)
- 1 cup fresh peaches, sliced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice
- 2 tbsp fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook for 5-6 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and jalapeños. Sauté for 1-2 minutes until fragrant.
- Add peaches, honey, and lime juice to the skillet. Cook for 3-4 minutes, stirring occasionally, until the peaches soften slightly.
- Return the chicken to the skillet, spooning the sauce over the top. Simmer for 2-3 minutes to let the flavors meld.
- Garnish with fresh cilantro before serving.
