Honey Bun Carrot Cake with Cinnamon Cream Frosting

For the Crust:

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup honey
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugars, cinnamon, nutmeg, baking soda, and salt.
  3. Add oil, honey, eggs, and vanilla extract. Mix until well combined. Fold in grated carrots and walnuts (if using).
  4. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  5. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, cinnamon, and vanilla, mixing until creamy.
  6. Spread frosting evenly over cooled cake. Slice and serve.
