For the Crust:
- 1 lb fresh salmon fillet, skin removed and cut into chunks
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups fish or vegetable broth
- 1 cup coconut milk
- 1 tsp dried dill
- 1/2 tsp paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5 minutes until softened.
- Pour in the broth and bring to a simmer. Add dried dill, paprika, salt, and pepper. Cook for 10 minutes until vegetables are tender.
- Gently add salmon chunks to the pot and simmer for 5-7 minutes until salmon is cooked through.
- Stir in coconut milk and heat through without boiling. Adjust seasoning if needed.
- Ladle into bowls, garnish with fresh parsley, and serve warm.
