Homemade Pecan Pie Cookies

Delicious cookies that capture the rich flavors of pecan pie in a bite-sized treat.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1/4 cup corn syrup
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and brown sugar until light and fluffy. Mix in egg yolk and vanilla.
  3. Gradually add flour and salt, mixing until a dough forms. Roll dough into small balls and place on baking sheet.
  4. Press the center of each dough ball with your thumb to create a small well.
  5. In another bowl, mix chopped pecans, corn syrup, and granulated sugar. Spoon this mixture into each dough well.
  6. Bake for 12-15 minutes or until edges are golden. Let cool before serving.

Notes

You can customize the seasonings to taste.
