Homemade Lazy Girl Pecan Pie Bars

Easy-to-make pecan pie bars with a buttery shortbread crust and a gooey pecan topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix flour, softened butter, granulated sugar, and salt until crumbly. Press into the prepared pan to form the crust.
  3. Bake crust for 15 minutes until lightly golden. Remove from oven and let cool slightly.
  4. In another bowl, whisk eggs, corn syrup, brown sugar, melted butter, and vanilla until smooth. Stir in chopped pecans.
  5. Pour pecan mixture over the baked crust. Return to oven and bake for 25-30 minutes until set.
  6. Cool completely before cutting into bars.

Notes

You can customize the seasonings to taste.
