Hobo Casserole Ground Beef

A classic, comforting one-pan meal with seasoned ground beef, potatoes, and vegetables, all baked together for a simple and satisfying dinner.

For the Crust:

  • 1 lb ground beef
  • 4 medium potatoes, peeled and sliced
  • 1 large onion, sliced
  • 2 carrots, peeled and sliced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a skillet, brown the ground beef over medium heat until no longer pink; drain excess fat. Season with salt, pepper, garlic powder, and paprika.
  3. Layer the sliced potatoes, onions, and carrots in the prepared baking dish. Spread the cooked ground beef evenly over the vegetables.
  4. In a small bowl, mix the cream of mushroom soup with milk until smooth. Pour this mixture over the beef and vegetables.
  5. Cover the dish with foil and bake for 45 minutes. Remove foil, sprinkle with cheese if using, and bake uncovered for another 15 minutes or until potatoes are tender and top is golden.
