High-Protein Chicken and Rice Skillet

  • 1 cup frozen peas and carrots
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Season the chicken pieces with garlic powder, smoked paprika, onion powder, salt, and pepper.
  2. Heat olive oil in a large deep skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, stirring occasionally, until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, add the diced onion and cook for 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the uncooked rice to the skillet and toast for 1-2 minutes, stirring constantly.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  6. Stir in the frozen peas and carrots along with the cooked chicken. Cook for 3-4 minutes until heated through.
  7. Sprinkle the shredded cheddar cheese evenly over the top, cover, and let it melt for 2-3 minutes.
