For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup crushed pineapple, drained
- 1/2 cup white chocolate chips, melted
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and melted white chocolate.
- Alternately add flour mixture and buttermilk to the batter, beginning and ending with flour. Fold in crushed pineapple.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean. Cool completely before glazing.
