Heavenly White Chocolate Pineapple Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • 1/2 cup white chocolate chips, melted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and melted white chocolate.
  4. Alternately add flour mixture and buttermilk to the batter, beginning and ending with flour. Fold in crushed pineapple.
  5. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean. Cool completely before glazing.
