For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 1 cup whipped cream
- 1/4 cup strawberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan.
- In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in vanilla.
- Pour cheesecake mixture over the crust. Bake for 25-30 minutes until set. Let cool completely.
- Spread strawberry jam over the cooled cheesecake layer. Top with diced strawberries and whipped cream.
- Refrigerate for at least 2 hours before slicing into bars.
