Heavenly Strawberry Shortcake Cheesecake Bars

A delightful fusion of strawberry shortcake and creamy cheesecake in bar form.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, diced
  • 1/4 cup strawberry jam
  • 1 cup whipped cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Line an 8×8 baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and granulated sugar. Press firmly into the pan to form the crust. Bake for 10 minutes, then cool completely.
  3. Beat cream cheese, sour cream, powdered sugar, and vanilla until smooth. Spread over cooled crust and refrigerate for 2 hours.
  4. Top cheesecake layer with diced strawberries. Warm strawberry jam slightly and drizzle over strawberries.
  5. Cut into bars and serve with whipped cream on top.
