For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh strawberries, diced
- 1/4 cup strawberry jam
- 1 cup whipped cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Line an 8×8 baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and granulated sugar. Press firmly into the pan to form the crust. Bake for 10 minutes, then cool completely.
- Beat cream cheese, sour cream, powdered sugar, and vanilla until smooth. Spread over cooled crust and refrigerate for 2 hours.
- Top cheesecake layer with diced strawberries. Warm strawberry jam slightly and drizzle over strawberries.
- Cut into bars and serve with whipped cream on top.
