Heavenly Peach Cobbler Poke Cake

For the Crust:

  • 1 box vanilla cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 can (15 oz) peach slices in syrup
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup butter, melted
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Whipped cream or vanilla ice cream (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Prepare cake mix with water, oil, and eggs according to package instructions. Pour batter into a greased 9×13-inch baking pan.
  2. Bake for 25-30 minutes until a toothpick inserted comes out clean. Let cool for 10 minutes.
  3. While cake is cooling, drain peach syrup into a bowl. Use the handle of a wooden spoon to poke holes all over the cake, then pour peach syrup evenly over the cake.
  4. In a separate bowl, mix brown sugar, flour, melted butter, cinnamon, and nutmeg to make the cobbler topping. Sprinkle evenly over the cake.
  5. Return to oven and bake for 10-12 minutes until topping is golden brown. Serve warm with whipped cream or ice cream if desired.
