For the Crust:
- 2 cups grated carrots
- 1 cup grated apple
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugars, cinnamon, nutmeg, baking soda, and salt.
- Add oil, eggs, and vanilla to the dry ingredients. Mix until just combined.
- Fold in grated carrots and apples until evenly distributed.
- Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
