For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 3 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1 cup grated apple
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs and mix in oil, grated carrots, grated apple, and vanilla extract.
- Combine wet and dry ingredients, stirring until just blended. Fold in walnuts if using.
- Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
