Heavenly Carrot Apple Cake

A moist and flavorful cake combining the sweetness of carrots and apples with warm spices.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup grated apple
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs and mix in oil, grated carrots, grated apple, and vanilla extract.
  4. Combine wet and dry ingredients, stirring until just blended. Fold in walnuts if using.
  5. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool before serving.

Notes

You can customize the seasonings to taste.
