Heavenly Blueberry Velvet Cake

A moist and tender blueberry-infused velvet cake with a delicate crumb and vibrant flavor.

For the Crust:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1 tbsp flour (for coating blueberries)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix oil, buttermilk, eggs, vinegar, and vanilla. Gradually add to dry ingredients, mixing until smooth.
  4. Toss blueberries with 1 tbsp flour, then gently fold into batter.
  5. Divide batter evenly between pans. Bake for 25-30 minutes until a toothpick comes out clean.
  6. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Notes

You can customize the seasonings to taste.
