For the Crust:
- 2 cups chocolate cookie crumbs
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1/2 cup cocoa powder
- 1 cup pitted cherries, chopped
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- Extra cherries and chocolate shavings for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix cookie crumbs and melted butter, then press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, and cocoa powder.
- Fold in chopped cherries, then pour batter over crust. Bake for 45-50 minutes until center is set.
- Cool cheesecake completely, then refrigerate for at least 4 hours.
- Before serving, whip heavy cream with powdered sugar until stiff peaks form. Top cheesecake with whipped cream, fresh cherries, and chocolate shavings.
