Healthy Cheesecake

A light and creamy cheesecake with a nutty crust, sweetened naturally and perfect for a guilt-free dessert.

For the Crust:

  • 1 cup almond flour
  • 2 tbsp coconut oil, melted
  • 1 tbsp maple syrup
  • 16 oz cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (160°C).
  2. Mix almond flour, coconut oil, and maple syrup in a bowl. Press into the bottom of a springform pan to form the crust.
  3. In a separate bowl, beat cream cheese, Greek yogurt, honey, eggs, vanilla extract, and lemon juice until smooth.
  4. Pour the filling over the crust and smooth the top.
  5. Bake for 30 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.

Notes

You can customize the seasonings to taste.
