For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup shredded coconut
- 1/2 cup crushed pineapple (drained)
- 3 large eggs
- 1/2 cup coconut milk
- 1/2 cup unsalted butter (softened)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Alternately add the dry ingredients and coconut milk to the butter mixture, mixing until just combined.
- Fold in shredded coconut and crushed pineapple.
- Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
