Hawaiian Pineapple Coconut Dream Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup shredded coconut
  • 1/2 cup crushed pineapple (drained)
  • 3 large eggs
  • 1/2 cup coconut milk
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Alternately add the dry ingredients and coconut milk to the butter mixture, mixing until just combined.
  6. Fold in shredded coconut and crushed pineapple.
  7. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
