Ground Beef and Rice Casserole

Ingredients

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup water
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef and chopped onion over medium heat until meat is no longer pink; drain.
  3. Stir in uncooked rice, cream of mushroom soup, diced tomatoes with juice, water, garlic powder, salt, and pepper.
  4. Bring mixture to a boil, then remove from heat.
  5. Pour mixture into a greased 9×13-inch baking dish.
  6. Cover tightly with foil and bake for 1 hour or until rice is tender.
  7. Remove from oven, sprinkle shredded cheddar cheese over the top.
  8. Return to oven uncovered and bake an additional 5-10 minutes or until cheese is melted.

Notes

For a creamier texture, you can add a splash of milk to the soup mixture before baking. Feel free to substitute cream of mushroom soup with cream of chicken or celery soup for a different flavor profile.
