- 2 3/4 cups (358g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup (224g) unsalted butter, room temperature
- 1 cup + 2 tbsp (233g) granulated sugar
- 2 tbsp (28g) brown sugar
- 1 large egg
- 2 tsp vanilla extract
- Green gel icing color
- Red heart sprinkles
- 1–2 oz white chocolate (optional for decoration)
Instructions
- Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, combine the flour, baking soda, baking powder, and salt. Set aside.
- In a large mixer bowl, cream the butter and both sugars together on medium speed until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mix until well combined.
- Gradually add the dry ingredients and mix until a thick, non-sticky dough forms; do not overmix.
- Add green gel icing color to achieve desired color and mix.
- Using a scoop or spoon, form dough balls and place on baking sheets spaced apart.
- Bake for 9-11 minutes or until edges are set and tops are dry.
- Cool on baking sheets for a few minutes before transferring to a wire rack.
- Decorate with red heart sprinkles and optionally drizzle or chip with melted white chocolate to add detail resembling the Grinch's heart.
Notes
Use gel food coloring for a vibrant green color without thinning the dough. Do not overbake to keep cookies soft. For extra fun, decorate with white chocolate and heart sprinkles to represent the Grinch’s heart.
