For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 cups mixed salad greens
- 1 large avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tbsp balsamic vinaigrette
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat.
- Rub chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
- Grill chicken for 6-7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.
- In a large bowl, combine salad greens, avocado, cherry tomatoes, and red onion.
- Top salad with sliced grilled chicken and drizzle with balsamic vinaigrette.
- Toss gently and serve immediately.
