Grilled Chicken Avocado Salad

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups mixed salad greens
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tbsp balsamic vinaigrette

Instructions

1. Prepare the Crust:

  1. Preheat grill to medium-high heat.
  2. Rub chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
  3. Grill chicken for 6-7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.
  4. In a large bowl, combine salad greens, avocado, cherry tomatoes, and red onion.
  5. Top salad with sliced grilled chicken and drizzle with balsamic vinaigrette.
  6. Toss gently and serve immediately.
