Greek Peasant Salad

A rustic and refreshing salad featuring crisp vegetables, briny olives, and tangy feta cheese, dressed simply with olive oil and lemon juice.

For the Crust:

  • 4 large ripe tomatoes, chopped
  • 1 large cucumber, chopped
  • 1 red onion, thinly sliced
  • 1 green bell pepper, chopped
  • 1 cup Kalamata olives
  • 8 oz block feta cheese, cubed
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

1. Prepare the Crust:

  1. Combine tomatoes, cucumber, red onion, bell pepper, olives, and feta cheese in a large bowl.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour dressing over salad and toss gently to combine.
  4. Let stand for 10 minutes before serving to allow flavors to meld.
