For the Crust:
- 4 large ripe tomatoes, chopped
- 1 large cucumber, chopped
- 1 red onion, thinly sliced
- 1 green bell pepper, chopped
- 1 cup Kalamata olives
- 8 oz block feta cheese, cubed
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt and freshly ground black pepper to taste
Instructions
1. Prepare the Crust:
- Combine tomatoes, cucumber, red onion, bell pepper, olives, and feta cheese in a large bowl.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over salad and toss gently to combine.
- Let stand for 10 minutes before serving to allow flavors to meld.

You can customize the seasonings to taste.
