Gooey Reese’s Cheesecake Cookies

Soft, gooey cookies with a rich cheesecake center and chunks of Reese’s peanut butter cups.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup Reese’s peanut butter cups, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, beat cream cheese and powdered sugar until smooth. Set aside.
  3. Cream together butter and sugars until fluffy. Beat in eggs and vanilla.
  4. Whisk together flour, baking soda, and salt; gradually mix into butter mixture.
  5. Fold in chopped Reese’s cups. Drop tablespoonfuls of dough onto baking sheets.
  6. Make an indentation in each cookie, add a small scoop of cream cheese mixture, then cover with more dough.
  7. Bake for 10-12 minutes until edges are golden. Let cool on sheet for 5 minutes.

You can customize the seasonings to taste.
