For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup Reese’s peanut butter cups, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, beat cream cheese and powdered sugar until smooth. Set aside.
- Cream together butter and sugars until fluffy. Beat in eggs and vanilla.
- Whisk together flour, baking soda, and salt; gradually mix into butter mixture.
- Fold in chopped Reese’s cups. Drop tablespoonfuls of dough onto baking sheets.
- Make an indentation in each cookie, add a small scoop of cream cheese mixture, then cover with more dough.
- Bake for 10-12 minutes until edges are golden. Let cool on sheet for 5 minutes.
