Gooey Cinnamon Cream Cheese Muffins

Deliciously moist muffins with a gooey cinnamon cream cheese center, perfect for breakfast or dessert.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, egg, and vanilla. Pour wet ingredients into dry ingredients and stir until just combined.
  4. In a small bowl, mix softened cream cheese, brown sugar, and cinnamon until smooth.
  5. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool before serving.

Notes

You can customize the seasonings to taste.
