Gooey Cinnamon Cream Cheese Muffins

Soft, tender muffins with a sweet cream cheese swirl and a cinnamon sugar topping that bakes into a gooey, irresistible treat.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, 1/2 cup granulated sugar, brown sugar, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, egg, and 1 tsp vanilla. Pour wet ingredients into dry and stir until just combined.
  4. In a small bowl, beat softened cream cheese with 1/4 cup sugar and 1 tsp vanilla until smooth.
  5. Fill each muffin cup halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
  6. Mix 1/4 cup sugar with cinnamon and sprinkle generously over each muffin.
  7. Bake for 20-25 minutes, until tops are golden and a toothpick comes out clean. Let cool slightly before serving.
