For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup granulated sugar
- 1 tbsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, 1/2 cup granulated sugar, brown sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, egg, and 1 tsp vanilla. Pour wet ingredients into dry and stir until just combined.
- In a small bowl, beat softened cream cheese with 1/4 cup sugar and 1 tsp vanilla until smooth.
- Fill each muffin cup halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
- Mix 1/4 cup sugar with cinnamon and sprinkle generously over each muffin.
- Bake for 20-25 minutes, until tops are golden and a toothpick comes out clean. Let cool slightly before serving.
