Gooey Chocolate Caramel Turtle Cake Roll

A decadent chocolate cake roll filled with gooey caramel, pecans, and chocolate for a rich turtle-inspired dessert.

For the Crust:

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 cup caramel sauce
  • 1/2 cup chopped pecans
  • 1/2 cup semi-sweet chocolate chips
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease.
  2. Beat eggs and sugar until thick and pale. Mix in cocoa powder, vanilla, and salt. Fold in flour and baking powder until just combined.
  3. Spread batter evenly into prepared pan. Bake for 12-15 minutes until cake springs back when touched.
  4. Immediately invert cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off parchment paper. Roll cake up in the towel while warm and let cool completely.
  5. Unroll cooled cake and spread caramel sauce evenly over the surface. Sprinkle with pecans and chocolate chips. Re-roll cake without the towel.
  6. Chill for 1 hour before slicing. Dust with powdered sugar before serving.
