For the Crust:
- 1 1/2 cups warm water
- 2 1/4 tsp active dry yeast
- 1 tbsp brown sugar
- 4 cups all-purpose flour
- 1 tsp salt
- 2 tbsp unsalted butter, melted
- 8 oz mozzarella cheese, cut into small cubes
- 1/4 cup baking soda
- 1 large egg, beaten
- Coarse sea salt for topping
Instructions
1. Prepare the Crust:
- In a bowl, combine warm water, yeast, and brown sugar. Let sit for 5 minutes until foamy.
- Mix in flour, salt, and melted butter until a dough forms. Knead for 5 minutes, then let rise for 1 hour.
- Preheat oven to 450°F (230°C). Bring 8 cups of water and baking soda to a boil in a large pot.
- Divide dough into small pieces, flatten each, place a cheese cube in center, and seal tightly into a ball.
- Boil pretzel bites in batches for 30 seconds each, then transfer to a baking sheet. Brush with beaten egg and sprinkle with sea salt.
- Bake for 12-15 minutes until golden brown. Serve warm.
