Gooey Cheesy Pretzel Bites with Sea Salt Topping

Soft, warm pretzel bites stuffed with melted cheese and topped with coarse sea salt for the perfect savory snack.

For the Crust:

  • 1 1/2 cups warm water
  • 2 1/4 tsp active dry yeast
  • 1 tbsp brown sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp unsalted butter, melted
  • 8 oz mozzarella cheese, cut into small cubes
  • 1/4 cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt for topping

Instructions

1. Prepare the Crust:

  1. In a bowl, combine warm water, yeast, and brown sugar. Let sit for 5 minutes until foamy.
  2. Mix in flour, salt, and melted butter until a dough forms. Knead for 5 minutes, then let rise for 1 hour.
  3. Preheat oven to 450°F (230°C). Bring 8 cups of water and baking soda to a boil in a large pot.
  4. Divide dough into small pieces, flatten each, place a cheese cube in center, and seal tightly into a ball.
  5. Boil pretzel bites in batches for 30 seconds each, then transfer to a baking sheet. Brush with beaten egg and sprinkle with sea salt.
  6. Bake for 12-15 minutes until golden brown. Serve warm.
