For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 1/2 cups diced apples
- 1/2 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Alternately mix in the dry ingredients and buttermilk, starting and ending with the dry ingredients.
- Fold in diced apples. Fill muffin cups halfway with batter, add a teaspoon of caramel sauce, then top with more batter.
- Bake for 20-25 minutes or until a toothpick comes out clean. Drizzle with extra caramel while warm.
