Gooey Caramel Apple Buttermilk Muffins

Deliciously moist muffins filled with caramel and fresh apples, perfect for breakfast or dessert.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups diced apples
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  4. Alternately mix in the dry ingredients and buttermilk, starting and ending with the dry ingredients.
  5. Fold in diced apples. Fill muffin cups halfway with batter, add a teaspoon of caramel sauce, then top with more batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Drizzle with extra caramel while warm.

Notes

You can customize the seasonings to taste.
