Gooey Caramel Apple Buttermilk Muffins

Warm, tender muffins filled with sweet apple chunks and a gooey caramel center, perfect for breakfast or dessert.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled and diced apples
  • 12 soft caramel candies, unwrapped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix buttermilk, melted butter, eggs, and vanilla until combined.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples.
  5. Scoop batter into muffin cups until half full. Place a caramel candy in the center of each, then cover with more batter until cups are 3/4 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted comes out clean. Let cool for 5 minutes before serving.

You can customize the seasonings to taste.
