Gooey Boston Cream Pie Cookies

Soft, cake-like cookies filled with creamy vanilla custard and topped with a rich chocolate glaze, inspired by the classic Boston Cream Pie.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup prepared vanilla pudding or custard
  • 1/2 cup semi-sweet chocolate chips
  • 2 tbsp heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar. Add egg, milk, and vanilla; mix until smooth. Gradually add flour, baking powder, and salt, stirring until a soft dough forms.
  3. Drop tablespoon-sized portions of dough onto the baking sheet, spacing 2 inches apart. Bake for 10-12 minutes until edges are lightly golden. Let cool completely.
  4. Spread a layer of vanilla pudding on the flat side of half the cookies. Top with remaining cookies to form sandwiches.
  5. Melt chocolate chips with heavy cream in microwave or double boiler, stirring until smooth. Drizzle or spread over the top of each cookie. Let set before serving.

Notes

You can customize the seasonings to taste.
