Gingerbread Loaf

A spice-filled gingerbread loaf with warm ginger, cinnamon, nutmeg, and cloves. Moist and tender with molasses flavor, perfect for the holiday season.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, room temperature
  • 1/3 cup light brown sugar, packed
  • 3/4 cup molasses
  • 2 large eggs, room temperature
  • 1 cup buttermilk, room temperature
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan and line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large bowl, cream together butter and brown sugar until light and fluffy.
  4. Add molasses to the butter mixture and beat until smooth. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla extract.
  6. Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with dry ingredients. Stir just until combined after each addition.
  7. Pour batter into prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out with only a few crumbs.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to ensure a tender crumb. Use room temperature ingredients for best results. This loaf pairs beautifully with cream cheese frosting or a simple dusting of confectioners’ sugar.
