- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1/2 cup unsalted butter, room temperature
- 1/3 cup light brown sugar, packed
- 3/4 cup molasses
- 2 large eggs, room temperature
- 1 cup buttermilk, room temperature
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan and line with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves. Set aside.
- In a large bowl, cream together butter and brown sugar until light and fluffy.
- Add molasses to the butter mixture and beat until smooth. Add eggs one at a time, beating well after each addition.
- Stir in vanilla extract.
- Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with dry ingredients. Stir just until combined after each addition.
- Pour batter into prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out with only a few crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the batter to ensure a tender crumb. Use room temperature ingredients for best results. This loaf pairs beautifully with cream cheese frosting or a simple dusting of confectioners’ sugar.
