For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 cup molasses
- 1 cup hot water
- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate bowl, beat butter and sugar until light and fluffy. Add egg and molasses, mixing well.
- Alternately add the dry ingredients and hot water to the butter mixture, mixing until just combined.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
- Let cake cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
