Gingerbread Cake with Vanilla Glaze

A moist and spiced gingerbread cake topped with a smooth vanilla glaze, perfect for the holidays.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 cup hot water
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and cloves.
  3. In another bowl, cream butter and brown sugar until fluffy. Beat in egg and molasses.
  4. Alternately add dry ingredients and hot water to the butter mixture, mixing until smooth.
  5. Pour batter into the prepared pan. Bake for 30 minutes or until a toothpick comes out clean.
  6. Cool cake in pan for 10 minutes, then transfer to a wire rack.
  7. For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
